Delicious Cheese Cake
Ingredients
1 2/3 cups graham crakers (about 14 double crackers) Rolled fine into crumbs
2 tbsp. sugar
1 1/2 txp. cinnamon
6 tbsp. melted butter
Filling:
2lbs Sierra Part Skim Ricotta Cheese
1 1/4 cup sugar
3 eggs, well beaten
3/4 tsp. vanilla
Topping:
1 pint sour cream
3 tbsp. sugar
1/2 tsp vanilla
Mix crust ingredients. Pat crust into bottom and sides of a 10inch spring mold, 3 inches deep. Bake 10 minutes at 425F. Prepare the filling by beating the cheese thoroughly. Add the sugar gradually. Add eggs, one at a time, and then the vanilla. Carefully pour into the pie shell. Bake 20 minutes at 375 f. Remove from the oven. Whip sour cream; add sugar and vanilla. Pour over baked pie. Bake 5 minutes at 500f . Refridgerate for 4 hours then serve.
